Scià del Ulmo is made from a single vineyard of Merlot. Years of experience have shown that the historic French variety Merlot, when grown in the Ulmo vineyard on the shores of Lake Arancio, produces an ideal wine that beautifully expresses this terroir. Although it is an international variety cultivated worldwide, this Merlot, grown in southwestern Sicily, has become a wine that represents a wonderful Sicilian character with long-term aging potential.

Grape Variety: 100% Merlot
Tasting Notes: Deep, bright purple color. Aromas of ripe fruit are harmoniously balanced with gentle, elegant oak notes. The concentrated and rich aromas hint at the potential for elegant and complex flavors to develop with age. The long finish of plum and oak-infused flavors is complemented by soft, pleasant tannins.
Production Method: After harvesting, the grapes are destemmed and crushed, and the must is transferred to stainless steel tanks for alcoholic fermentation. Depending on the fermentation stage, pumping over is performed 2-3 times a day for short periods of 15-20 minutes to minimize stress on the skins while extracting complexity into the wine. Fermentation lasts approximately 6-8 days. The temperature is gradually increased, starting at about 16°C, then 20-22°C in the middle, and up to 25-26°C at the end, with cooling stopped in the final stage to complete fermentation. After fermentation, the wine is racked to remove lees and then transferred to French oak barrels for 14 months of aging. Malolactic fermentation occurs entirely within the barrels. Aging uses Allier oak barrels (50% new, 25% second-use, 25% third-use).
