SIT DEL ULMO is made from single vineyard Merlot. After many years of experience, the historic French varietal Merlot has produced an ideal wine that expresses this terroir well in the Ulmo vineyard, located on the shores of Lake Arancio.

Grape varietal: 100% Merlot

Tasting: Ripe aromas of black cherry and plum, with nuances of tobacco, spice, and dark chocolate. The palate is full-bodied, with firm tannins and rich fruit in harmony. The long finish of licorice and vanilla results in a complex and elegant vintage.

Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, short pumping-over (circulation) is performed 2-3 times a day for 15-20 minutes to temporarily suppress the burden on the skin and reduce the complexity of the wine. The fermentation period is approximately 6-8 days. The temperature is gradually increased from approximately 16°C at the beginning, to a target of 20-22°C, and then to 25-26°C towards the end. Cooling is stopped at this stage to complete fermentation. After fermentation, the wine is racked and transferred to French oak barrels for 14 months of aging, with the lees incorporated. Malolactic fermentation takes place entirely in the barrels. Aging uses Allier oak barrels (50% new barrels, 25% second-year barrels, 25% third-year barrels).
