Sieti del Ulmo is made from single-vineyard Merlot. Years of experience have shown that the historic French varietal Merlot, grown in the Ulmo vineyard on the shores of Lake Arancio, produces an ideal wine that beautifully expresses this terroir.

Classification: Menfi DOC

Grape variety: 100% Merlot

Tasting: Deep ruby red. Rich aromas of black cherry and plum intertwine with nuances of tobacco and sweet spices. Full-bodied, with firm tannins and rich fruit well-balanced. The lingering finish of dark chocolate and vanilla makes for an elegant and complex vintage.

Production Method: After harvest, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. During fermentation, short pump-overs (circulation) are performed 2-3 times a day for 15-20 minutes, which temporarily reduces stress on the skins while promoting complexity in the wine. Fermentation lasts approximately 6-8 days, gradually increasing the temperature from an initial 16°C to an average of 20-22°C, and then to 25-26°C towards the end, at which point cooling is stopped to complete fermentation. After fermentation, the wine is racked off its lees and transferred to French oak barrels for 14 months of aging. Malolactic fermentation occurs entirely in the barrels. Aging uses Allier oak barrels (50% new, 25% second use, 25% third use).
