Sieti del Ulmo is made from single-vineyard Merlot. Years of experience have shown that the historic French grape variety Merlot, when grown in the Ulmo vineyard on the shores of Lake Arancio, produces an ideal wine that beautifully expresses this terroir. Although it is an international variety cultivated worldwide, this Merlot, grown in southwestern Sicily, has become a wine that represents a splendid Sicilian character with the potential for long aging.

Grape Variety: 100% Merlot
Tasting: Characterized by a dense garnet color, it offers rich aromas of black plum and cassis, with subtle hints of tobacco and spice. Full-bodied, with firm tannins and rich fruit flavors balanced by a round, soft mouthfeel. The finish reveals dark chocolate and vanilla, making this vintage a blend of depth and elegance. In cool years, blessed with the best environment for Merlot, this vintage fully expresses the individuality and charm of Merlot.
Winemaking: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, pumping over (circulation) is performed 2-3 times a day for 15-20 minutes to minimize stress on the skins while extracting the wine's complexity. Fermentation lasts approximately 6-8 days. The temperature is gradually increased from about 16°C in the initial stage, to 20-22°C in the middle, and up to 25-26°C in the final stage, after which cooling is stopped to complete fermentation. After fermentation, the wine is racked, and after removing the lees, it is transferred to French oak barrels for 14 months of aging. Malolactic fermentation occurs entirely within the barrels. Aging takes place in Allier oak barrels (50% new oak, 25% second-year oak, 25% third-year oak).
