Sieti del Ulmo is made from a single vineyard of Merlot. Through years of experience, we have learned that the historic French grape variety Merlot, grown in the Ulmo vineyard on the shores of Lake Arancio, produces an ideal wine that beautifully expresses this terroir. While it is an international variety cultivated worldwide, this Merlot, grown in southwestern Sicily, has become a wine that expresses a magnificent Sicilian character with great aging potential.

Grape Variety: 100% Merlot
Tasting: Deep garnet color. Rich aromas of ripe plum and blackberry, with nuances of tobacco, spice, and dark chocolate. This is an elegant and complex vintage with a full body, smooth tannins, and abundant fruit flavors harmoniously blending like silk, followed by a long finish of vanilla and licorice. It is one of the best vintages in recent years, characterized by powerful and well-balanced tannins.
Production Method: After harvest, the grapes are destemmed and crushed, and the must is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, pumping over (circulation) is performed 2-3 times a day for short periods of 15-20 minutes to minimize stress on the skins while extracting complexity from the wine. Fermentation lasts approximately 6-8 days. The temperature is gradually increased from an initial 16°C, to 20-22°C in the middle, and up to 25-26°C at the end, with cooling stopped in the final stage to complete fermentation. After fermentation, the wine is racked and, once the lees are removed, transferred to French oak barrels for 14 months of aging. All malolactic fermentation takes place in barrels. Aging uses Allier oak barrels (50% new oak, 25% second-year barrels, 25% third-year barrels).
