Planeta's Santa Cecilia, produced in Noto, the holy land of Nero d'Avola, is always a magnificent wine that expresses Nero d'Avola truthfully. Elegant, powerful, and with balanced Sicilian aromas, Santa Cecilia has become the benchmark for red wines made from indigenous Sicilian grape varieties today.

Grape variety: 100% Nero d'Avola

Tasting: As a benchmark wine for Nero d'Avola, a representative indigenous Sicilian grape variety, it fully expresses its true value. Produced from white soils and old vines characteristic of the Noto region in southern Sicily, the wine's greatest feature is its superb harmony of elegance, power, and balance.

Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the fermentation stage, short pump-overs (circulation) are performed three times a day for 10-25 minutes to extract the wine's complexity while slightly reducing the burden on the skins. Fermentation lasts approximately 7-8 days. During this period, the temperature is stopped at 14-15°C and then raised to 24-25°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tank is filled with wine from the same vineyard, and a long maceration of 28-35 days is performed with the skins in contact with the wine, followed by racking. Malolactic fermentation isalways carried out in stainless steel tanks at a controlled temperature of approximately 20-21°C. The wine is then transferred to French oak barrels and aged for 14 months, starting in December for one month. (15% new barrels, 28% second-year barrels, 29% fourth-year barrels)
