Planeta's Santa Cecilia, produced in Noto, the "holy land" of Nero d'Avola, is a great wine that consistently expresses the true character of Nero d'Avola. Elegant, powerful, and balanced with Sicilian aromas, Santa Cecilia is now a benchmark for red wines made from indigenous Sicilian grape varieties.

Tasting: This wine is made to be a "benchmark" for Nero d'Avola, the most important grape variety in Sicily. Its taste perfectly expresses "elegance," "power," and "balance," with a style that emphasizes unique Sicilian aromas.
Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, short pump-overs (circulation) of 10 to 25 minutes are performed three times a day to gently reduce the burden on the skins while enhancing the wine's complexity. Fermentation takes approximately 7 to 8 days. The temperature is kept at 14-15°C, and cooling is stopped during the period. The temperature is then raised to 24-25°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tanks are filled with wine from the same vineyard, and a long maceration of 28 to 35 days with skin contact is performed before racking. Malolactic fermentation is always carried out in stainless steel tanks at a controlled temperature of approximately 20-21°C. The wine is then transferred to French oak barrels in December for one month, where it ages for 14 months (15% new oak, 28% second-year barrels, 29% fourth-year barrels).
