Planeta's Santa Cecilia, made in Noto, which can be called the sacred ground of Nero d'Avola, is a great wine that always honestly expresses Nero d'Avola. Elegant, powerful, and with balanced Sicilian aromas, Santa Cecilia has become a benchmark for red wines made from indigenous Sicilian grape varieties today.

Grape variety: 100% Nero d'Avola

Tasting: This wine is crafted to be a "benchmark" for Nero d'Avola, the most important grape variety in Sicily. Its taste perfectly expresses "elegance," "power," and "balance," resulting in a style that emphasizes the unique aromas characteristic of Sicily.

Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, short pump-overs (circulation) are performed three times a day for 10-25 minutes to extract the wine's complexity while slightly reducing the burden on the skins. The fermentation period is approximately 7-8 days. During this period, the temperature is raised from 14-15°C to 24-25°C by stopping cooling to complete the final alcoholic fermentation. After alcoholic fermentation, the tanks are filled with wine from the same vineyard, and a long maceration period of 28-35 days is performed with the skins in contact with the wine, followed by racking. Malolactic fermentation isalways carried out in stainless steel tanks at a controlled temperature of approximately 20-21°C. It is then transferred to French oak barrels for aging, which begins in December and lasts for one month, for a total of 14 months. (15% new barrels, 28% second-year barrels, 29% fourth-year barrels)
