Planeta's Santa Cecilia, made in Noto, considered the holy land of Nero d'Avola, is always a great wine that expresses the true character of Nero d'Avola. Elegant, powerful, and with a balanced Sicilian aroma, Santa Cecilia has become a benchmark for red wines made from indigenous Sicilian grape varieties today.

Grape Variety: 100% Nero d'Avola

Tasting Notes: Bright ruby color. Complex aromas of tobacco and spices, dominated by ripe black cherry and plum. Supple tannins and bright acidity are perfectly balanced, resulting in a full-bodied and rich flavor. The finish is long, with nuances of dark chocolate and licorice, making for a sophisticated vintage.

Production Method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. During fermentation, short pump-overs (circulation) are performed 3 times a day for 10-25 minutes to extract complexity from the wine while minimizing stress on the skins. Fermentation lasts approximately 7-8 days. The temperature is maintained at 14-15°C, then cooling is stopped and the temperature is raised to 24-25°C to complete alcoholic fermentation. After alcoholic fermentation, the tanks are filled with wine from the same vineyard, and a long maceration (28-35 days) takes place with the skins in contact with the wine, followed by racking. Malolactic fermentation always takes place in stainless steel tanks, maintained at approximately 20-21°C. The wine is then transferred to French oak barrels in December for one month of aging, and aged for 14 months. (15% new barrels, 28% second-year barrels, 29% fourth-year barrels)
