Planeta's Santa Cecilia, produced in Noto, the birthplace of Nero d'Avola, is always a great wine that faithfully expresses Nero d'Avola. Elegant, powerful, and with a well-balanced Sicilian aroma, Santa Cecilia is now the benchmark for red wines made from indigenous Sicilian grape varieties.

Grape variety: 100% Nero d'Avola

Tasting: A vibrant ruby color. Predominantly ripe black cherry and plum, with complex aromas of tobacco and spice. Supple tannins and bright acidity are perfectly balanced, creating a full-bodied and rich flavor. The finish is long, with nuances of dark chocolate and licorice, making for a sophisticated vintage.

Production Method: After harvesting, destemming and crushing are performed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, pumping over (circulation) is performed briefly for 10-25 minutes, three times a day, to extract the complexity of the wine while slightly reducing the burden on the skins. The fermentation period is approximately 7-8 days. During this period, cooling is stopped, and the temperature is raised to 24-25°C from 14-15°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tank is filled with wine from the same vineyard, and a long maceration of 28-35 days is carried out with the skins and wine in contact, after which the wine is racked. Malolactic fermentation is always performed in stainless steel tanks, maintained at approximately 20-21°C. The wine is then transferred to French oak barrels, where it begins aging in December for one month, and is aged for 14 months. (15% new barrels, 28% second-year barrels, 29% fourth-year barrels)
