Planeta's Santa Cecilia, produced in Noto, the "holy land" of Nero d'Avola, is always a great wine that honestly expresses Nero d'Avola. Elegant, powerful, and with a balanced Sicilian aroma, Santa Cecilia is now the benchmark for red wines made from indigenous Sicilian grape varieties.

Tasting: Deep ruby color. Aromas of ripe berries and black cherries, with complex nuances of spices and tobacco. The palate is smooth, with firm tannins and rich acidity in harmony, leading to a long finish with dark chocolate notes, making this a powerful and elegant vintage. This is one of the best vintages, with excellent conditions for "Nero d'Avola", the king of Sicily.
Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. During fermentation, short pump-overs (circulation) of 10-25 minutes are performed three times a day, slightly reducing the burden on the skins while bringing out the complexity of the wine. Fermentation lasts about 7-8 days. During this period, cooling is stopped and the temperature is raised to 24-25°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tank is filled with wine from the same vineyard, and a long ceramission (maceration) of 28-35 days is performed with the skins and wine in contact, after which it is racked. Malolactic fermentation is always performed in stainless steel tanks, controlled at approximately 20-21°C. It is then transferred to French oak barrels and aged for 14 months, starting in December for one month. (15% new barrels, 28% second-year barrels, 29% fourth-year barrels)
