Planeta's Santa Cecilia, produced in Noto, which can be called the sacred place of Nero d'Avola, is always a great wine that frankly expresses Nero d'Avola. Elegant, powerful, and with a balanced Sicilian aroma, Santa Cecilia has become a benchmark for red wines made from indigenous Sicilian grape varieties today.

Tasting: A beautiful vintage with dense tannins and fine fruit.
Production Method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. During the fermentation process, pump-overs are performed three times a day for short periods of 10-25 minutes, gently extracting complexity from the wine while minimizing stress on the skins. The fermentation period is approximately 7-8 days. Initially, the temperature is maintained at 14-15°C, then cooling is stopped, and the temperature is raised to 24-25°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tanks are filled with wine from the same vineyard, and a long maceration period of 28-35 days is carried out with skin contact, followed by racking. Malolactic fermentation is always performed in stainless steel tanks, maintained at approximately 20-21°C. The wine is then transferred to French oak barrels in December, where it ages for 14 months (15% new barrels, 28% second-year barrels, 28% third-year barrels, 29% fourth-year barrels).
