Product Details
Planeta's Santa Cecilia, produced in Noto, the "holy land" of Nero d'Avola, is a great wine that always expresses Nero d'Avola truthfully. Elegant, powerful, and with a well-balanced Sicilian aroma, Santa Cecilia is now a benchmark for red wines made from indigenous Sicilian grape varieties.
Classification: Noto DOC
Grape variety: 100% Nero d'Avola
Tasting: A classic Noto Nero d'Avola wine with rich tannins derived from ripe fruit.
Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, pumping over (circulation) is carried out three times a day for 10-25 minutes at a time, to extract complexity from the wine while slightly reducing stress on the skins. Fermentation takes approximately 7-8 days. Initially, the temperature is 14-15°C, then cooling is stopped and the temperature is raised to 24-25°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tanks are filled with wine from the same vineyard, and the skins and wine are left in contact for a long maceration period of 28-35 days, after which the wine is racked. Malolactic fermentation is always carried out in stainless steel tanks at a controlled temperature of approximately 20-21°C. It is then transferred to oak barrels and aged for 14 months, starting in December and continuing for one month. Oak barrels are used for aging. (15% new barrels, 28% 2nd year barrels, 28% 3rd year barrels, 29% 4th year barrels)
Pairing: A wide range of dishes from grilled vegetables and pasta to meat dishes.
