Planeta's Santa Cecilia, made in Noto, which can be called the sacred ground of Nero d'Avola, is always a great wine that expresses Nero d'Avola honestly. Elegant, powerful, and with balanced Sicilian aromas, Santa Cecilia has become a benchmark for red wines made from indigenous Sicilian varieties today.

Grape variety: 100% Nero d'Avola

Tasting: A deep ruby red with hints of maturity. In addition to aromas of raspberry, dried cherry, and subtle dried fruit, over time, nuances of Mediterranean herbs like violet, lavender, and rosemary expand. The palate is supple, with tannins that melt smoothly into a velvety texture with aging, transforming into a creamy, settled feel. Fresh acidity beautifully supports the whole, leading to an elegant and long finish. This is a refined and mature vintage, harmonizing fruitiness and elegance.

Production method: After harvesting, the grapes are destemmed and crushed, and the must is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, pumping over is performed three times a day for short periods of 10-25 minutes to extract the wine's complexity while slightly reducing the burden on the skins. The fermentation period is about 7-8 days. The temperature is kept at 14-15°C, then cooling is stopped, and the temperature is raised to 24-25°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tank is filled with wine from the same vineyard, and after 28-35 days of long maceration with the skins in contact with the wine, it is racked. Malolactic fermentation is always carried out in stainless steel tanks, maintained at approximately 20-21°C. The wine is then transferred to French oak barrels in December, where it ages for 14 months. (15% new barrels, 28% second-year barrels, 29% fourth-year barrels)
