Santa Cecilia from Planeta, produced in Noto, the "holy land" of Nero d'Avola, is a great wine that consistently expresses the true character of Nero d'Avola. Elegant, powerful, and with balanced Sicilian aromas, Santa Cecilia has become a benchmark for red wines made from indigenous Sicilian varietals today.

Tasting Notes: In a very hot year, this wine has developed a character truly representative of Santa Cecilia.
Production Method: After harvesting, the grapes are destemmed and crushed, then the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the fermentation stage, pumping over (circulation) is performed three times a day for short periods of 10-25 minutes to gently extract complexity from the wine while minimizing stress on the skins. The fermentation period is approximately 7-8 days. Initially, the temperature is maintained at 14-15°C, then cooling is stopped, and the temperature is raised to 24-25°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tanks are filled with wine from the same vineyard, and a long maceration (infusion) of 28-35 days is carried out with the skins and wine in contact, followed by racking. Malolactic fermentation is always performed in stainless steel tanks, maintained at approximately 20-21°C. The wine is then transferred to French oak barrels and begins barrel aging from December for one month, aging for 14 months. Oak barrels are used for aging (15% new oak, 28% second-year barrels, 28% third-year barrels, 29% fourth-year barrels).
