Planeta's Santa Cecilia, made in Noto, which can be called the sacred place of Nero d'Avola, is always a great wine that honestly expresses Nero d'Avola. Elegant, powerful, and with a balanced Sicilian aroma, Santa Cecilia is now a benchmark for red wines made from indigenous Sicilian grape varieties.

Grape variety: 100% Nero d'Avola

Tasting: With a smooth mouthfeel, flavors of ripe cherries and berries spread. The moderate acidity tightens the whole, and with aging, the tannins are silky and soft. An elegant and deep taste with a harmony of fruitiness, acidity, and structure.

Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the progress of fermentation, short pump-overs (circulation) are performed three times a day for 10-25 minutes, gently extracting complexity from the wine while minimizing stress on the skins. The fermentation period is about 7-8 days. Initially, the temperature is 14-15°C, then cooling is stopped during the period, and the temperature is raised to 24-25°C to complete the final alcoholic fermentation. After alcoholic fermentation, the tank is filled with wine from the same vineyard, and after 28-35 days of long maceration with skin contact, the wine is racked. Malolactic fermentation is always carried out in stainless steel tanks, maintained at approximately 20-21°C. It is then transferred to French oak barrels and aged for 14 months, starting from December over a period of one month. (15% new barrels, 28% second-year barrels, 28% third-year barrels, 29% fourth-year barrels)
