Product Details
This majestic Amarone is made from grapes harvested from the single vineyard of Mazzano in Negrar, which boasts a history dating back to the 12th century. It is made using the traditional appassimento method, resulting in a dignified flavor supported by a firm structure.
Classification: Amarone della Valpolicella Classico DOCG
Varieties: Corvina 75%, Rondinella 20%, Molinara 5%
Tasting Notes: Fermentation is carried out with yeast for 45 days, followed by 3 years of aging in large oak barrels. It has a deep, matte red color with powerful aromas of blackcurrant and blackberry, complemented by nuances of forest and cinnamon. Flavors of ripe plum and cherry are blended with hints of vanilla and clove, creating a strong structure balanced by acidity and tannins for elegance. The finish is very long.
Winemaking: Grapes harvested at the end of September or beginning of October are partially dried for two months on bamboo racks in a drying room with large windows next to the Mazzano vineyard. They are then aged for 36 months in Slavonian oak and Allier oak barrels.
Pairing: Excellent with red meat dishes, game dishes such as quail, aged cheeses like Parmigiano and Pecorino, and also as an after-dinner drink.
