This majestic Amarone is made from grapes harvested in the single vineyard of Mazzano in Negrar, which has a history dating back to the 12th century.It is produced using the traditional appassimento method, resulting in a dignified flavor supported by a firm structure.

Classification: Amarone della Valpolicella Classico DOCG

Grape varieties: Corvina 75%, Rondinella 20%, Molinara 5%

Tasting: Fermentation with yeast for 45 days. Aged for 3 years in large oak barrels. Intense and very deep ruby red color. The elegant and dignified bouquet presents aromas of cherry, plum, and also incense. Flavors of licorice, bitter chocolate, and toasted coffee among the fruit. The aftertaste has a hint of gianduja chocolate within cherry, plum, and wild cherry. The finish is dry and long-lasting.

Winemaking method: Grapes harvested at the end of September or beginning of October are air-dried on bamboo racks for two and a half months in a drying room with large windows next to the Mazzano vineyard. After that, it is aged for 36 months in Slavonian oak barrels and Allier oak barrels for 45 days.

Pairing: Ideal with red meat dishes, game dishes such as quail, aged cheeses such as Parmigiano and Pecorino, and also as a digestif.
