Product Details
This majestic Amarone is made from grapes harvested from the single vineyard of Mazzano in Negrar, which has a history dating back to the 12th century. It is produced using the traditional appassimento method, resulting in a dignified flavor supported by a firm structure.
Classification: Amarone della Valpolicella Classico DOCG
Grape varieties: Corvina 75%, Rondinella 20%, Molinara 5%
Tasting: Fermentation takes place with yeast for 45 days, followed by 3 and a half years of aging in large oak barrels. Deep garnet red, with prominent aromas of ripe cherry and cinnamon. The firm full body, characteristic of Mazzano, harmonizes cooked cherry, prune, and spices, with a long chocolatey finish.
Winemaking method: Grapes harvested at the end of September or beginning of October are partially dried for two months on bamboo racks in a drying shed with large windows next to the Mazzano vineyard. Only Corvina grapes develop noble rot. Subsequently, natural cold fermentation proceeds for 45 days in large Slavonian oak barrels, continuing into malolactic fermentation. Aging takes place for 36 months in 600L Slavonian oak barrels and Allier oak barrels in their second and third years.
Pairing: Best with red meat dishes, game dishes such as quail, aged cheeses like Parmigiano and Pecorino, and also excellent as an after-dinner drink.
