1. Novantano 2021

This wine is made by fermenting Nebbiolo like white wine and then turning it into sparkling wine. It has a pronounced minerality and aromas of citrus, fresh apple, and bread crust. With lively acidity, it is an exceptionally easy-drinking style.

Classification: Alpi Retiche IGT

Grape Variety: Nebbiolo

Soil: Ancient glacial, rocky, sandy, with some limestone

Winemaking: Before bottling, 15% is aged in barrels and 85% in stainless steel tanks for six months. It then undergoes secondary fermentation and ages on the lees in the bottle for another three years until disgorgement.

Pairing: Fish dishes, rich dishes, pasta, Milanese-style risotto (saffron risotto)

2. Nebbiolo 2024

Spicy aromas with notes of ripe black cherry, prune, and withered violets. Warm, smooth, and rich, with a pleasant finish of sweet almonds.

Classification: Rosso di Valtellina DOC

Grape Variety: Nebbiolo

Soil: Ancient glacial, rocky, sandy, with some limestone

Winemaking: Short fermentation in stainless steel tanks, followed by stainless

Pairing: Pasta, rice dishes, lean white meat dishes, red meat dishes, and various other dishes
