Winter brought abundant rain and slightly cooler temperatures than in 2016. Summer was not overly hot; rather, it was dry, and we were grateful for the welcome rain in September, which completed a perfect summer. The harvest of this year yielded perfect grapes, also in terms of their health. After protective measures with sulfur and copper, we allowed for a natural and spontaneous selection of fruits, and the aromatic and tannic characteristics were splendidly expressed.

Classification: Menfi DOC

Grape Variety: Cabernet Franc 100%

Tasting Notes: A deep, brilliant ruby color. Impressive pure aromas derived from healthy fruit, expanding to reveal notes of blackberry, red currant, lavender, and fresh herbs. The tannins are supple, with accents of spice and black pepper adding depth to the flavor. The fruitiness is rich yet maintains a light balance, with natural acidity that tightens the overall elegant style. This vintage beautifully expresses the individuality of the varietal, where youthfulness and sophistication coexist.

Production Method: All harvested grapes are picked by hand and placed in small boxes weighing 14-16kg. After harvest, they are cooled at 8-11°C for 16-24 hours. At the sorting table, 2-2.5% are first removed, followed by destemming, and then a final selection is performed. Only carefully selected fruits are transferred directly to tanks or barrels via a conveyor belt with a crusher. Alcoholic fermentation takes place using selected yeasts in three different types of vessels (tonneau, barrique, and stainless steel tanks) at controlled temperatures of 18-24°C. Wines fermented in stainless steel tanks and tonneaux are then transferred to oak barrels for aging. After fermentation is complete, the free-run juice is racked, and the grape skins are moved to a basket press. After pressing, only the highest quality parts are selected for the wine. Aging takes place in Saury and Seguin Moreau barriques (Integral - 35% new oak, Traditional - 38% new oak, Traditional - 27% 2nd year oak).

Pairing: Game, veal, pork chops, wagyu beef, grilled vegetables, aged cheese
