Winemaker Alessio, driven by the desire to produce high-quality white wine from indigenous Southern Italian grape varieties that could stand alongside the world's most renowned white wines, experimented by planting various grapes in Sicily. This unique wine, where the distinct characteristics of the grape variety merge with Sicily's terroir, boasts dense, fruity aromas, a magnificent structure, and minerality. Today, it stands as one of the most important white wines of Southern Italy.

Classification: Menfi DOC

Grape Variety: 100% Fiano

Tasting Notes: A brilliant yellow-gold color. Reflecting good ripeness at harvest, it initially presented refreshing aromas reminiscent of grapefruit, white peach, and Mediterranean herbs. With aging, it has evolved into a more complex bouquet, gaining nuances of ripe nectarine, apricot, honey, and subtle almond and spice. The palate is rich and rounded, yet the acidity, brought by cool night temperatures, beautifully tightens the wine, leading to a long, mineral finish. This is an elegant and well-balanced aged vintage, harmonizing fruit richness with transparency.

Production Method: Grapes are hand-harvested, destemmed, and pressed. 90% of the must goes into stainless steel tanks, and 10%
into 225-liter oak barrels for fermentation at 15°C for 10 days. Both batches are aged on their lees for 5 months in oak barrels and stainless steel tanks, respectively. Afterward, the wine from the barrels is blended into the stainless steel tanks for an additional month of aging.
