In the Sicilian dialect, "Burdese" means "Bordeaux," indicating that this wine uses classic Bordeaux varieties, Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its dense and firm structure and excellent balance.

Tasting notes: As befits a year with low yields and excellent quality, the concentrated fruit flavor is impressive. Aromas of ripe black cherry, cassis, vanilla, and spice spread, with current notes of cocoa, dried herbs, and a hint of leather. Velvety tannins add depth to the wine, creating a style that harmonizes power and elegance.
Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. During fermentation, pump-overs are performed twice a day for 10-15 minutes, and the juice is transferred to stainless steel tanks for alcoholic fermentation. While minimizing skin contact, alcoholic fermentation lasts for approximately 6-8 days. The temperature is gradually raised from 15-16°C initially, to 20-22°C temporarily, and then to 26-27°C at the end, before cooling is stopped to complete fermentation. After 12-15 days of maceration (skin contact) in contact with the skins and wine, the wine is racked. During this period, the temperature is controlled at approximately 20-22°C, and micro-oxygenation (micro-oxygen supply) is performed to dissolve trace amounts of oxygen. Malolactic fermentation takes place in stainless steel tanks, after which the lees are thoroughly incorporated before being transferred to French oak barrels for 16 months of aging.
