In the Sicilian dialect, "Burdese" means "from Bordeaux," indicating that this wine uses classic Bordeaux varieties: Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its dense and firm structure and excellent sense of balance.

Tasting: A well-balanced vintage reflecting ideal climatic conditions. Aromas of blackberry, plum, cocoa, and spice harmonize, with nuances of tobacco and leather beginning to emerge with aging. The tannins still have a firm presence, but the palate is smooth. A classic expression with both concentration and freshness.
Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic
fermentation. Depending on the fermentation stage, pumping over (circulation) is performed twice a day for short periods of 10-15 minutes to avoid excessive extraction from the skins. The fermentation period is about 6-8 days. The temperature is gradually raised from 15-16°C initially, to 20-22°C for a period, and then to 26-27°C towards the end. Cooling is stopped in the final stage to complete fermentation. After 12-15 days of maceration with the skins, the wine is racked. During this period, the temperature is controlled at approximately 20-22°C, and micro-oxygenation (micro-oxygen supply) is performed to dissolve a small amount of oxygen. Malolactic fermentation takes place in stainless steel tanks, after which the wine is thoroughly incorporated with the lees and transferred to French oak barrels for 16 months of aging.
