In Sicilian dialect, "Burdese" means "from Bordeaux," indicating the use of classic Bordeaux varietals, Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its dense and firm structure and excellent balance.

Classification: Menfi DOC

Grape varieties: Cabernet Sauvignon 70%, Cabernet Franc 30%

Tasting: Intense garnet color. Rich aromas of blackberry and plum, with nuances of spice and tobacco. Full-bodied, with powerful tannins and dense fruit harmoniously balanced by a well-integrated acidity. A complex and elegant vintage with a long finish of dark chocolate and licorice.

Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. During fermentation, pump-overs are performed twice a day for 10-15 minutes to avoid over-extraction from the skins. The fermentation period is approximately 6-8 days. The temperature is gradually increased from 15-16°C initially, to 20-22°C temporarily, and then to 26-27°C at the end, before cooling is stopped to complete fermentation. After 12-15 days of maceration (skin contact) at a controlled temperature of around 20-22°C with micro-oxygenation, the wine is racked. Malolactic fermentation takes place in stainless steel tanks, after which the wine is transferred to French oak barrels for 16 months of aging, incorporating the lees.

Pairing: Wild game and braised red meat dishes. Also pairs well with a wide range of foods including aged cheeses.
