Product Details
In the Sicilian dialect, "Burdese" means "from Bordeaux," indicating the use of classic Bordeaux varieties like Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its density, firm structure, and excellent balance.
Appellation: Menfi DOC
Grape Varieties: Cabernet Sauvignon 70%, Cabernet Franc 30%
Tasting Notes: Characterized by a deep garnet color. The aroma of ripe blackcurrant and plum fruit is accompanied by spicy nuances of tobacco and cinnamon. Full-bodied, with firm tannins and a rich, complex fruit flavor. This powerful and elegant vintage has a long finish with notes of dark chocolate and licorice. An excellent vintage, the wine was born in equally superb condition.
Production Method: After harvesting, the grapes are destemmed and crushed, then the juice is transferred to stainless steel tanks for alcoholic
fermentation. During fermentation, short pump-overs (circulation) are performed twice a day for 10-15 minutes to minimize stress on the skins. The fermentation period is approximately 6-8 days. The temperature is gradually raised from 15-16°C initially, to 20-22°C temporarily, and then to 26-27°C at the end, with cooling stopped in the final stage to complete fermentation. The wine tanks are filled, and after 12-15 days of maceration (skin contact) with the skins and wine, it is racked. During this maceration period, the temperature is maintained at approximately 20-22°C, and micro-oxygenation (micro-supply of oxygen) is performed to dissolve trace amounts of oxygen. Malolactic fermentation takes place in stainless steel tanks, after which the wine is racked and transferred to French oak barrels for 16 months of aging.
Pairing: A wide range of dishes including game, braised red meat, and aged cheeses.
