In the Sicilian dialect, "Burdese" means "Bordeaux," indicating that this wine uses the classic Bordeaux varieties of Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its density, firm structure, and excellent balance.

Tasting: Reflecting a cool and mild summer, it presents an elegant and delicate impression. While red fruit and violet aromas were dominant then, it now has evolved into nuances of dried cherry, herbs, and subtle spices. The tannins are soft, with a smooth mouthfeel. This vintage offers an elegant expression of aging, highlighting balance and sophistication rather than heaviness.
Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic
fermentation. During the fermentation process, pumping over (circulation) is performed twice a day for 10-15 minutes, gently extracting from the skins. The fermentation period is approximately 6-8 days. The temperature is gradually increased from 15-16°C initially, to 20-22°C temporarily, and finally to 26-27°C, with cooling stopped in the final stage to complete fermentation. The wine tanks are filled, and after 12-15 days of maceration with skin contact, the wine is racked. During this maceration period,the temperature is maintained at approximately 20-22°C, and micro-oxygenation (micro-oxygen supply) is performed to dissolve a small amount of oxygen. Malolactic fermentation takes place in stainless steel tanks, after which the lees are thoroughly incorporated before being transferred to French oak barrels for 16 months of aging. 100% new French oak from Allier is used for aging.
