In the Sicilian dialect, "Burdese" means "from Bordeaux," indicating the use of classic Bordeaux varieties like Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its dense and firm structure and excellent balance.

Tasting notes: Reflecting concentrated fruit from high temperatures, the primary notes are ripe blackberry, dried fig, and hints of spice. Currently, aromas of dried fruit, bitter chocolate, and a faint balsamic note are present, suggesting the rich depth typical of a powerful vintage. The acidity is mellow, and the wine is a rich, aged style with a harmonious blend of warm alcoholic sensation and rounded tannins.
Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the fermentation stage, pumping over (circulation) is performed twice a day for 10-15 minutes to minimize stress on the skins. The fermentation period is approximately 6-8 days. The temperature is gradually increased from 15-16°C initially, to 20-22°C temporarily, and then to 26-27°C towards the end, with cooling stopped in the final stage to complete fermentation. After alcoholic fermentation, the tanks are filled with wine from the same vineyard, and maceration (skin contact) is carried out for 12-15 days, after which the wine is racked. During this maceration period, the temperature is controlled at approximately 20-22°C, and micro-oxygenation (micro-oxygen supply) is performed to dissolve tiny amounts of oxygen. Malolactic fermentation takes place in stainless steel tanks, after which the wine is transferred to French oak barrels with its lees and aged for 16 months. 100% new Allier oak barrels are used for aging.
