In the Sicilian dialect, "Burdese" means "Bordeaux," indicating that this wine uses the classic Bordeaux varietals Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its density, solid structure, and exceptional balance.

Tasting Notes: A deep garnet-tinged ruby red. As expected from a vintage blessed with significant day-night temperature variations, this aged wine now offers a complex bouquet of black cherry, dried plum, cassis liqueur, along with nuances of tobacco, cocoa, and leather. While initially characterized by powerful and firm tannins, they have now beautifully integrated, transforming into a silky and mellow texture. The solid structure remains, with a long finish that carries hints of licorice and spice. This is a classic, well-rounded aged vintage that harmonizes the concentration and elegance created by international varietals and the Sicilian sun.

Production Method: After harvesting, the grapes are destemmed and crushed, then the juice is transferred to stainless steel tanks for alcoholic
fermentation. Depending on the stage of fermentation, pumping over (circulation) is performed twice a day for short periods of 10-15 minutes to minimize stress on the grape skins. The fermentation period is approximately 6-8 days. Temperatures are gradually increased from 15-16°C initially, to 20-22°C temporarily, and up to 26-27°C at the end, before cooling is stopped to complete fermentation. The wine tanks are filled with juice from the fields, and after 12-15 days of maceration (skin contact) with the skins and wine, racking is performed. During this maceration period,the temperature is maintained at approximately 20-22°C, and micro-oxygenation (addition of small amounts of oxygen) is carried out. Malolactic fermentation takes place in stainless steel tanks, after which the wine is transferred to French oak barrels, incorporating the lees, and aged for 16 months. The aging uses 100% new French oak from Allier.
