Winemaking: Slightly overripe grapes are destemmed and crushed, then undergo 20 days of skin maceration at 24-26°C with pump-overs and délestage. 20% saignée. Malolactic fermentation takes place in barriques, followed by 12 months of aging in Nevers and Tronçais barriques.
