This wine, produced from old trees (average 40 years old) at Castello di Nipozzano, is a traditional and historic wine known as the Frescobaldi family's "Private Collection." Grape Varieties: Sangiovese, Malvasia Nera, Colorino, Canaiolo
Tasting: A brilliant, deep ruby color. Floral and fruity aromas blend beautifully with spicy notes. Wild rose and violet aromas are particularly prominent, harmonizing with nuances of small red fruits. The finish offers a rich, lingering balsamic scent and elegant toasted notes. The palate is smooth thanks to delicate tannins, with a wonderful balance of beautiful acidity and alcohol, resulting in a long-lasting finish.
Winemaking: Harvested at the end of September, followed by crushing, destemming, and spontaneous fermentation in temperature-controlled concrete tanks. After fermentation, maceration is carried out for 20 days, then transferred to 30hl oak barrels for 24 months of aging, followed by 3 months of bottle aging.
Pairing: Classic Tuscan dishes such as Ribollita, wild boar ragu, and red meat dishes.
