Trikalinos, established in 1856, is a historic Greek producer of fresh bottarga.

They use only natural grey mullet roe caught in the Aegean Sea.

The unique advantages of their fresh bottarga—"extremely soft, delicate, and fresh"—are characterized by:

  • A juicy, velvety texture
  • A rich aroma reminiscent of citrus and iodine (the sea, ocean, and tides)
  • Exceptionally rich umami and a long, pleasant aftertaste
  • Ingredients limited to grey mullet roe, salt, and beeswax for coating / No preservatives or additives
  • An extremely low salt content of 2% (typical Japanese karasumi has around 5%)
  • A shelf life of 12 months from production

Its unforgettable texture and flavor, and the rich, concentrated taste of umami, truly make it "the jewel of Greek gastronomy."
