Winemaking: This wine is made from 40-year-old Aglianico vines. Fermentation and maceration take place in chestnut vats for 25 days, followed by soft pressing. It is then aged for 12 months in French oak tonneaux, with three rackings during this period. Bottle aging for 8 months. Unfiltered.

Pairing: Game dishes, roasted meats, aged strong cheeses
