Winemaking: After destemming, pre-fermentation maceration is carried out for 4 days at 3-4°C. This is followed by 6-8 days of maceration, then alcoholic and malolactic fermentation at 20°C. The wine is aged for 6 months in concrete tanks, followed by 3 months in the bottle.
