A single-vineyard Amarone made using traditional methods. Rich, spicy, and powerful. Can be aged for over 20 years.
Classification: Amarone della Valpolicella Classico DOCG
Grape varieties: Corvina 70%, Rondinella 20%, Molinara 10% (Serego Alighieri clone / average vine age 33-38 years)
Tasting: Dark crimson. Sweet and concentrated aromas of stewed plums and ripe cherries, resulting from aging in cherry wood barrels. Very powerful and well-structured, yet characterized by a smooth and mellow, velvety taste.
Production method: A wine made using "appassimento," an ancient method of drying grapes. Grapes are carefully selected and harvested in late September or early October, then dried in a well-ventilated room on special bamboo racks until early February. They are then carefully pressed, and the semi-dried grapes are partially destemmed and fermented for 48 days at naturally low temperatures in large Slavonian oak barrels. The wine then continues to ferment until the sugar is completely converted to alcohol, followed by malolactic fermentation. It is aged for 3 years in Slavonian oak barrels (6-20 hl), then for 4 months in cherry wood barrels. It is then bottle-aged for a minimum of 5 months.
