In 1716, Cosimo III, Grand Duke of Tuscany, drew boundaries that are considered to be one of the first examples of appellation control systems in the world, designating four areas as prestigious wine regions. Pomino is one of them. This Pomino Beneficio Riserva also tells the story of Chardonnay in Tuscany, as the first Chardonnay vines in Tuscany were planted here in 1855. In 1973, it also became famous as the first barrel-aged white wine in Italy.

Grape variety: Chardonnay

Tasting notes: A clear, brilliant golden color. The aroma of candied orange peel, dried fruit, and white flowers is accented by a subtle hint of pepper. Over time, a delicate yeast aroma gradually unfolds. This extremely elegant wine, produced in a high-altitude, cool climate, harmoniously balances freshness with alcoholic volume, resulting in a very well-balanced and harmonious wine.

Winemaking: The grapes are pressed very gently, extracting a clear must from the initial stages. The must is then decanted at a low temperature to enhance its clarity further. After this, the must undergoes alcoholic fermentation in barriques (50% new barrels, 50% once-used barrels), with a portion undergoing malolactic fermentation. The wine then ages with its skins in wooden barrels for 10 months, with bâtonnage performed as needed. Finally, it undergoes an additional 4 months of bottle aging.

Pairing: Vegetable soup, oven-baked sea bream or salmon fillet, creamy sauces, caviar, etc.
