[The Great Cru – Fossati]
The Fossati vineyard was formed from marine sediments that covered the Po River plain after the African continent pressed against the Italian peninsula approximately 6 million years ago. This vineyard has relatively young soil with a high proportion of sand, resulting in wines with wonderful floral and red fruit aromas.
The country road from Barolo to La Morra runs along the Fossati vineyard. The approximately 3.2-hectare estate vineyard is located on a southeast-facing slope at an altitude of 290-350 meters.

Tasting Notes: An elegant wine with a firm structure, featuring an aroma of flowers and red fruits blended with sweet spices (nutmeg and cinnamon), and smooth tannins.
Winemaking Method: Grapes harvested from the single Fossati vineyard, which has existed for about 10 centuries, undergo fermentation at 22-29°C for 12 days, followed by maceration at a constant temperature of 22°C for 30 days. Malolactic fermentation then occurs at 22°C for 15 days. The wine is aged in Slavonian oak barrels (4500L) for 4 years, followed by 6 months of bottle aging. Due to the soil containing an appropriate amount of sand, the wine finishes with fragrant floral and red fruit aromas.
Pairing: Piedmontese risotto (with meat sauce cooked in Barolo), beef braised in Barolo, aged cheeses.
