Planeta's Santa Cecilia, made in Noto, which can be called the holy land of Nero d'Avola, is always a great wine that expresses Nero d'Avola honestly. Elegant, powerful, and with a balanced Sicilian aroma, Santa Cecilia has become a benchmark for red wines made from indigenous Sicilian grape varieties today.

Tasting: This wine fully expresses the true value of Nero d'Avola, an indigenous grape variety that represents Sicily and serves as a benchmark. This wine, born from the white soil and old vines characteristic of the Noto region in the southernmost part of Sicily, is distinguished by its exquisite harmony of elegance, power, and balance.
Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, short pump-overs (circulation) are performed 3 times a day for 10-25 minutes to gently extract complexity from the wine while minimizing stress on the skins. The fermentation period is approximately 7-8 days. During this period, cooling is stopped, and the temperature is allowed to rise to 24-25°C to complete the final alcoholic fermentation, with temperatures reaching up to 14-15°C. After the completion of alcoholic fermentation, the tanks are filled with wine from the same vineyard, and a long maceration period of 28-35 days is performed with the skins in contact with the wine, followed by racking. Malolactic fermentation isalways carried out in stainless steel tanks, maintained at approximately 20-21°C. The wine is then transferred to French oak barrels and begins aging in December for one month, aging for 14 months.
