The best vineyards in the Valpolicella Classica region are located on the hills by Lake Garda, known as "Costasera," which are well exposed to the setting sun. High-quality Amarone is produced from grapes harvested in these vineyards, where a warm climate is sustained by long hours of sunshine and sunlight reflected from the lake.

Costasera, with its rich aroma of ripe fruit and solid structure, is said to be capable of long-term aging for 35 years.

Variety: Corvina 70%, Rondinella 25%, Molinara 5%

Tasting notes: Deep garnet color. Ripe aromas of black cherry and plum, with nuances of cocoa and spice. Full-bodied, with silky tannins that exquisitely harmonize with the fruitiness, creating a rich taste. The long-lasting finish is rich, resulting in an elegant Amarone.

Production method: Grapes harvested from late September to early October are shade-dried for one month on bamboo racks in a special drying shed with the NASA (Natural Air-drying System for Grapes). Only Corvina grapes are affected by noble rot. After 45 days of natural low-temperature fermentation (14°C) in large Slavonian oak barrels or stainless steel tanks, the wine is transferred to 30-40 hl barrels, where alcoholic fermentation and malolactic fermentation continue for another 35 days using alcohol-tolerant yeast. 80% of the wine is aged for 24 months in large Slavonian oak barrels (40-80 hl), and 20% in small Allier and Slavonian oak barrels (600L, 40% new barrels, 30% 2-year-old, 30% 3-year-old). Minimum of 4 months of barrel aging.
