The "Costasera" hills along Lake Garda, where the evening sun often sets, boast the best vineyards in the Valpolicella Classica region. From grapes harvested in these vineyards, which benefit from a warm climate due to long hours of sunshine and sunlight reflected from the lake, high-quality Amarone is produced.

Costasera, with its rich aroma of ripe fruits and solid structure, is said to be capable of long-term aging for 35 years.

Varieties: Corvina 70%, Rondinella 25%, Molinara 5%

Tasting notes: Fermentation takes place with yeast for 45 days. 60% is aged in large Slavonian oak barrels of 30-40HL, and the remaining 40% is aged in 600L Slavonian oak barrels for 3 years. It presents a very viscous, matte red color. A complex bouquet of baked fruits, cinnamon, and nuts unfolds. The taste of cooked cherries and sweet spices is very soft and alluring, with acidity and soft tannins harmonizing beautifully to create a very elegant wine.

Production Method: Grapes harvested from late September to early October are shade-dried for one month on bamboo racks in special drying sheds with NASA (Natural Air-drying System for Grapes). Botrytis cinerea only affects Corvina grapes. After 45 days of natural cold fermentation (14°C) in large Slavonian oak barrels or stainless steel tanks, the wine is transferred to 30-40 hl barrels for continued alcoholic fermentation and malolactic fermentation for another 35 days using alcohol-tolerant yeast. 80% of the wine is aged in large Slavonian oak barrels (40-80 hl), and 20% in small Allier and Slavonian oak barrels (600L, 40% new, 30% 2-year-old, 30% 3-year-old barrels) for 24 months. Minimum barrel aging is 4 months.
