Tasting notes: Deep ruby red. Balsamic notes elegantly mingle with aromas of violet petals, spirit-soaked cherries, licorice, and chocolate. A warm and smooth taste. This wine has a wonderful balance of ripe fruit, tannins, and a persistent acidity that lingers on the finish.

Winemaking: Fermented with indigenous yeasts, with skin management through punch-downs. Maceration takes place for a minimum of 3 weeks. Aged for 24 months in French and Austrian oak barrels (various sizes), followed by a minimum of 4 months of bottle aging.

Pairing: Grilled meats, game dishes, rich cheeses
