商品詳細
Classification: Rosso del Veronese IGT
Grape varieties: Corvina 72%, Rondinella 23%, Molinara 5%
Tasting notes: Deep ruby red. Youthful pink hues at the rim of the glass. Spicy aromas with notes of ripe fruit like black cherry and plum, and wilted violet flowers. Warm, smooth, and rich on the palate, with a pleasant sweet almond finish.
Winemaking: Grapes are harvested a little later than usual to reduce acidity. Masi revived the ancient Ripasso method of "double fermentation," and this wine was first produced in 1964. First, all three native grape varieties undergo primary fermentation. Then, this wine (70%) is poured over sun-dried grapes (30%) of the same three varieties, which have been dried for about 6 weeks, and undergoes a second fermentation at 18-20°C for 15 days. Malolactic fermentation immediately follows, a process that creates new aromas in the wine and enriches it with alcohol, pigment, and soft tannins. Two-thirds of the wine is aged for a minimum of 18 months in 90 HL Slavonian oak barrels, while the remaining one-third is aged for a minimum of 18 months in new 600L Allier and Slavonian oak barrels. Bottle aging is for a minimum of 3 months.
Pairing: Pasta with rich meat or mushroom sauces, grilled/roasted meats, game, cheese, etc.
