商品詳細
Appellation: Rosso del Veronese IGT
Grape Varieties: Corvina 72%, Rondinella 23%, Molinara 5%
Tasting: Deep ruby red. A youthful pinkish hue can be seen at the rim of the glass. Spicy aromas, with nuances of ripe fruit like black cherry and plum, and withered violets. A warm, smooth, and rich taste, with pleasant sweet almond on the finish.
Winemaking: The harvest is carried out slightly later than usual to reduce acidity. This wine was first produced in 1964, when Masi revived the ancient Ripasso method called "double fermentation." First, all three indigenous grape varieties undergo primary fermentation, and then 70% of that wine is poured over 30% of dried grapes (also all three varieties) that have been air-dried for about six weeks, and secondary fermentation takes place for 15 days at 18-20°C. Malolactic fermentation immediately follows, and this process creates new aromas in the wine, enriching it with alcohol, pigment, and soft tannins. Aging is carried out for a minimum of 18 months, with 2/3 of the wine in 90HL Slavonian oak barrels and the remaining 1/3 in new 600L Allier and Slavonian oak barrels. Bottle aging is for a minimum of 3 months.
Pairing: Pasta with rich sauces made with meat or mushrooms, grilled or roasted meats, game meats, cheeses, etc.
