Single-vineyard Amarone made using traditional methods. Rich, spicy, and powerful flavor. Can be aged for over 20 years.
Classification: Amarone della Valpolicella Classico DOCG
Grape varieties: Corvina 70%, Rondinella 20%, Molinara 10% (Serego Alighieri clones / average vine age 33-38 years)
Tasting: Matte ruby color. The aroma is a rich and complex blend of ripe cherries and baked plums. The taste has a sweetness, with flavors of ripe cherries and forest fruits, complemented by hints of cinnamon and vanilla.
Production method: Wine made using the traditional appassimento (grape drying) method. Grapes are carefully harvested at the end of September or beginning of October and air-dried on special bamboo racks in a well-ventilated room until early February. They are then gently pressed, and the semi-dried grapes are partially destemmed. Fermentation continues until all sugar is converted to alcohol, followed by malolactic fermentation. The wine is aged for 3 years in Slavonian oak barrels (6-20hl), then for 4 months in cherry wood barrels. Minimum of 5 months bottle aging.
