Grape varieties: Corvina 70%, Rondinella 20%, Molinara 10% (Serego Alighieri clone/average age of vines 33-38 years)
Tasting: Fermentation with yeast for 50 days, then aged for 5 years in Slavonian oak barrels of 7-20 hℓ, including 4 months in 600ℓ cherry wood barrels. It features a deep ruby red color with a hint of brown at the edges. The aroma is of cherry syrup with nuances of cinnamon. It is an attractive full-bodied wine that retains its youthfulness in both appearance and taste, characterized by a complex flavor that combines powerful cherry wood and fruit preserved in spirits.
Production method:Wine made by the ancient appassimento method (grape drying). Grapes harvested at the end of September or beginning of October are carefully selected and air-dried on specialized bamboo racks in a well-ventilated room until early February. After gentle pressing, some of the semi-dried grapes are destemmed. The wine then ferments until the sugar is completely converted to alcohol, followed by malolactic fermentation. It is aged for 3 years in Slavonian oak barrels (6-20hl), then 4 months in cherry wood barrels. Minimum 5 months of bottle aging.
