Sieti del Ulmo is made from single-vineyard Merlot grapes. Through years of experience, we discovered that Merlot, a historic French varietal, thrives in the Ulmo vineyard by Lake Arancio, producing an ideal wine that beautifully expresses this terroir. Although an international varietal cultivated worldwide, this Merlot, grown in southwestern Sicily, has resulted in a wonderful Sicilian wine with excellent aging potential.

Grape Varietal: 100% Merlot

Tasting Notes: Deep ruby in color. Aromas of ripe black plum and blackberry, with nuances of tobacco and spice. Full-bodied on the palate, with firm tannins and rich fruit flavors in harmony. The finish is long, with lingering notes of dark chocolate and vanilla, resulting in an elegant and powerful vintage.

Production Method: After harvest, the grapes are destemmed and crushed. The juice is then transferred to stainless steel tanks for alcoholic fermentation. Depending on the fermentation stage, pumping over (circulation) is performed 2-3 times a day for short periods of 15-20 minutes, minimizing stress on the grape skins while extracting complexity. Fermentation lasts approximately 6-8 days. The temperature is gradually increased, starting at around 16℃, rising to 20-22℃ in the middle stages, and 25-26℃ towards the end, with cooling stopped in the final stage to complete fermentation. After fermentation, the wine is racked to remove lees and then transferred to French oak barrels for 14 months of aging. Malolactic fermentation occurs entirely in the barrels. Aging takes place in Allier oak barrels (50% new oak, 25% second-use, 25% third-use).
