Sieti del Ulmo is made from single vineyard Merlot. Many years of experience have shown that the historic French varietal Merlot, grown in the Ulmo vineyard on the shores of Lake Arancio, produces an ideal wine that expresses this terroir well. Although it is an international varietal grown all over the world, this Merlot, grown in southwestern Sicily, has become a wine that expresses a wonderful Sicilian character with the potential for long aging.

Grape variety: 100% Merlot

Tasting: Deep ruby color. Aromas of ripe plum and blackcurrant are layered with subtle nuances of spice and tobacco. Full-bodied, with smooth tannins that harmonize with the fruitiness for a rich flavor. Dark chocolate and vanilla linger on the finish, making this an elegant and complex vintage. A year marked by intense heat. Characterized by dry, crisp tannins.

Production Method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the stage of fermentation, pumping over (circulation) is carried out 2-3 times a day for short periods of 15-20 minutes to minimize stress on the skins and bring out the complexity of the wine. Fermentation lasts approximately 6-8 days. The temperature is gradually increased from approximately 16°C in the initial stage to 20-22°C in the middle stage and 25-26°C in the final stage, with cooling stopped in the final stage to complete fermentation. After fermentation is complete, the wine is racked, and after the lees are removed, it is transferred to French oak barrels and aged for 14 months. Malolactic fermentation takes place entirely in the barrel. Aging uses oak barrels from Allier (50% new barrels, 25% second-year barrels, 25% third-year barrels).
