This majestic Amarone is made from grapes harvested from the single vineyard of Mazzano in Negrar, with a history dating back to the 12th century.It is made using the traditional Appassimento method, resulting in a dignified taste supported by a firm structure.

Classification: Amarone della Valpolicella Classico DOCG

Grape varieties: Corvina 75%, Rondinella 20%, Molinara 5%

Tasting notes: Beautiful deep crimson color. Impressive concentrated aromas of ripe cherry, blackberry, and plum. The palate is filled with spices such as licorice and bitter chocolate. It is dry and has a very long finish, with more supple aromas developing over time. It can be aged for 30 years.

Winemaking method: Grapes harvested in late September or early October are dried on bamboo racks for two and a half months in a drying shed with large windows next to the Mazzano vineyard. Only Corvina grapes are affected by noble rot. After that, natural cold fermentation takes place in large Slavonian oak barrels for 45 days, followed by malolactic fermentation. Aging is carried out for 36 months in 600L Slavonian oak barrels and Allier oak barrels in their second and third years.

Pairing: Ideal with red meat dishes, game dishes such as quail, aged cheeses such as Parmigiano and Pecorino, and as a digestif.
