A rich white wine born from a blend of Friulano and Chardonnay, dried at low temperatures, and fresh Sauvignon.
This is an excellent wine that has won Gambero Rosso's Tre Bicchieri almost every year since 2003.
Classification: Collio DOC
Grape varieties: Friulano 50%, Chardonnay 30%, Sauvignon 20%
Tasting: Golden color. Aromas of ripe tropical fruits, acacia honey, orange peel, and yellow flowers. This is a full-bodied wine with a soft taste, a pleasant fresh minerality, and good balance. It has a pleasantly long finish.
Production method: Select grapes from overripe bunches are collected in special lattice trays. Only Friulano and Chardonnay are dried at 0-2℃ in a small room with modern temperature and humidity control, reducing their weight by 10-20% (the percentage varies depending on the sugar content of the grapes). Meanwhile, Sauvignon is soft-pressed and stored at low temperatures to prevent fermentation from starting. After crushing the Friulano and Chardonnay, the three juices are blended and fermented in stainless steel tanks, aged for 11 months, and then bottle-aged for an additional 5 months.
Pairing: Boiled seafood, spring vegetables, seafood-based dishes and risottos, truffle and cheese risotto. In Friulian cuisine, boreto de canoce (mantis shrimp soup), and toc' in braide (polenta fonduta) with foie gras.
