In Sicilian dialect, "Burdese" means "from Bordeaux," indicating that this wine uses the classic Bordeaux varieties Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its dense, firm structure and excellent balance.

Tasting: Deep ruby color. Rich aromas of black cherry and blackcurrant, with nuances of spice, tobacco, and dark chocolate. Firm tannins and concentrated fruit flavors harmonize, enhanced by a pleasant acidity. Vanilla and licorice linger on the finish, resulting in an elegant and powerful vintage.
Production Method: After harvesting, the grapes are destemmed and crushed, and the must is transferred to stainless steel tanks for alcoholic
fermentation. During the fermentation process, pump-overs are performed twice a day for 10-15 minutes to gently extract color and tannins from the skins. The fermentation period is approximately 6-8 days. The temperature is gradually increased from 15-16°C initially, to 20-22°C temporarily, and then to 26-27°C at the end, before cooling is stopped to complete fermentation. After satisfactory fermentation, the wine undergoes maceration (skin contact) for 12-15 days, after which it is racked. During this maceration period, thetemperature is maintained at approximately 20-22°C, and micro-oxygenation (micro-oxygen supply) is performed to dissolve a small amount of oxygen. Malolactic fermentation takes place in stainless steel tanks, after which the wine is racked off the lees and transferred to French oak barrels for 16 months of aging.
